Awesome Oatmeal

Makes: Enough for 2

Prep Time: 5 min.
Cook Time: 10 min.

Ingredients:
2/3 Cups oatmeal
1.5 Cups water
1 Bartlett pear, washed, cored and chopped coarsely
1/4 Cup hemp seed hearts
3 Tbsp maple syrup

Directions:

Bring water to a boil, add oatmeal. Lower heat to simmer, cook oatmeal until thick. Remove from heat and cover for 2 min. Add the pears, hemp seed hearts, and maple syrup. Mix well. Enjoy!

Hemp seed hearts and nut spread or butter

A healthy alternative to commercial products, it is easily made and keeps in the fridge for several days. Take equal quantities of hemp seed and any nut you choose; sunflower seeds add a lovely, creamy emulsifying effect. Toasting them adds another twist in flavours.

Choose whichever nut you fancy. Classic peanut butter with shelled hemp seed is fantastic. Use the basic recipe and see what combinations you can come up with. Favourites like cashew, peanuts, pistachio or almonds produce great results.

Ingredients:

(will give about a small jar, will keep in the fridge for up to a week)

100 grams nuts (see examples below)
100 grams hemp seed or 30-40 grams of shelled
50 grams sunflower seeds (toasted or not)
1 dessertspoon honey

Directions:

Toast the sunflower seeds in a dry pan if desired. Grind the hemp, sunflower seeds and nuts you are using as fine as possible, then mix them together in a bowl with the honey, to form a paste. Spoon into a sealable container and enjoy on toast or bread.

Made with peanuts and served with red current jelly is a firm children’s favourite.

Crunchy Hemp Granola

Makes: 10 cups
Prep Time: 15 min
Cook Time: 3 hours

Ingredients:

1 1/4 cups hemp seed hearts
4 cups rolled oats
3/4 cups shredded coconut
3/4 cups rye flakes
3/4 cup sliced almonds
1/3 cup chopped hazelnuts
1/2 cup shelled sunflower seeds
1/2 cup sesame seeds
1/4 cup flax seed
1/3 cup coconut oil, hemp seed oil or safflower oil
1/2 cup honey
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/2 tsp. salt

Directions:

Preheat oven to 250 F. In a large bowl combine the dries and mix well. In a separate bowl whisk together the oil, honey, vanilla, cinnamon, and salt until blended, then pour over the dry ingredients. Mix thoroughly until everything is evenly coated.

Put the mixture in a 12"x18"x3" roasting pan. Bake 2 1/2 - 3 hours at 250 F, stirring every half hour, or until granola is evenly light brown in color and mostly dry. Let cool completely. Serve with dried fruit and milk of your choice. Store in a sealed container in the refrigerator.


BEVERAGES

Hemp Seed Heart Milk

Dear Parents: This is a very easy way to get a good source of the Omega-6 & Omega-3 Essential Fatty Acids for your children's breakfast. Hemp milk is enjoyed by many. Try some today!

Makes: 6-7 cups
Prep Time: 2 min

Ingredients:

1 cup hemp seed hearts
5-6 cups Water

Directions:

Combine the water and the hemp seed hearts in a blender. You can create the desired thickness by using more or less water (from coffee creamer consistency to skim). Blend on high for 2 -3 minutes, or until creamy and smooth. To sweeten add: banana, dates, figs, raisins, maple syrup, honey or your favorite fruit. Blend again until smooth. You can enjoy it thick or strain it through cheese cloth.

Hemp seed hearts Milk is perfect alone or with your breakfast cereal. It will keep for 3 days in the refrigerator in a sealed container. Shake well before use.

Smooth Orange Dream

Makes: 3 cups
Prep Time: 5 min

Ingredients:

1/2 cup hemp seed hearts
1 1/2 cups water
1/2 pint of frozen orange vanilla rice dream
1 banana - frozen
1/4 orange - frozen
1/4 tsp vanilla extract
1/2 tsp orange extract

Directions:

Combine water and hemp seed hearts in a blender. Blend on high for 2-3 minutes, until milk is created. Add the rest of the ingredients. Blend on high until creamy and smooth.

White Canadian

Makes: 4 cups (serves two)
Prep Time: 5 min

Ingredients:

3/4 cup hemp seed hearts
4 cups filtered water
4 Tbsp maple syrup
4 tsp nutmeg

Directions:

Fill 2 glasses with ice. Add 2 Tbsp of maple syrup and 2 tsp of nutmeg to each glass. Pour 2 cups of Hemp Milk in each glass and stir well.
This is a tasty holiday treat.

SOUP

Hemp Borsht

Borsht is a traditional Russian specialty. It is a very tasty soup which is loaded with powerful cancer fighting antioxidants.

Makes: Enough for 3
Prep Time: 15 min

Ingredients:

2 Tbsp hemp seed oil
1/2 cup hemp seed hearts
4 cups of beet(peeled & chopped)
2 cups of beets(shredded)
3 cups of water
1 large avocado
1 small onion(chopped)
2 cloves garlic
1/3 cup fresh squeezed lemon juice
1 Tbsp tamari

Directions:

Combine all ingredients except shredded beets in a blender. Blend on high until creamy and smooth. You may need to help stir it if you do not have a strong blender (A vitamix is best!).

Borsht can be served hot or cold. If you prefer it hot, place the blender mix in a pot and warm it on the stove on low(If you have a vitamix, it will warm by keeping it blending on high for 5 minutes). Stir the shredded beets into the hot or cold mixture and serve. You can garnish with strips of fresh chives.


SALADS

Green Goddess Salad Mix

Makes about 4-5 cups.

Ingredients:

1/2 head romaine lettuce, sliced
1/2 head of red leaf lettuce, sliced
1 cup red cabbage, sliced
1 pint cherry tomatoes
3 Tbps hemp seed hearts

Directions:

Place sliced leaves in a large salad bowl. Combine with sliced cabbage and cherry tomatoes. Toss with dressing. Top with hemp seed hearts and serve.

Perfect for lunch the next day. To make your salad last longer, keep dressing and greens in separate containers and toss before eating.

 

 

Thai Cabbage Salad

Enjoy the exotic flavors of Thailand with this salad. Enzymes from the veggies, and protein and essential fatty acids from the hemp seed hearts make a delicious meal.

Ingredients:

3 cups finely diced red cabbage
2 cups finely diced green cabbage
2 cups bit sized cauliflower
1 avocado
1/2 cup hemp seed hearts
1/2 cup minced fresh cilantro
1/4 cup extra virgin olive oil
1/4 cup brown rice syrup
1/4 cup soy sauce
3 Tbsp umeboshi vinegar
1 Tbsp grated orange zest
1 inch fresh ginger, juice extracted
1 clove fresh garlic, minced
Generous pinch of chili powder.

Directions:

Combine all ingredients in a large bowl and toss gently. Set aside to marinate for at least 30 minutes before serving.

 


ENTREES

 

Hemp Seed Heart Burgers

Makes: 6 patties
Prep Time: 10 min.
Cook Time: 30 min.

Ingredients:

10 ounces soft tofu
1 cup hemp seed hearts
1/4 cup sunflower seeds
1/4 cup scallions, chopped
2 Tbs. soy sauce
2 Tbs. nutritional yeast
1/2 tsp. dried basil
2 cups herb seasoned stuffing

Directions:

In a blender, puree tofu then add the rest of the ingredients except
stuffing. Put stuffing into a bowl and pour tofu mixture over top. Mix well. Form into burger patties and bake on a greased cookie sheet in a 300 F oven for 25-30 minutes or until golden brown.

Vegi Chili

Makes: Enough for 6
Prep Time: 10 min.
Cook Time: 45 min.

Ingredients:

2 tsp. coconut oil
3/4 onion, chopped
1 clove garlic, minced
3 cups canned peeled tomatoes, chopped, with juice
1 cup hemp seed hearts
1/3 cup of water
3 Tbs. chili powder, more if desired
2 tsp. molasses
3/4 tsp. cumin
1/8 tsp. cayenne pepper
1/2 tsp. black pepper
1-1/2 cups canned kidney beans, rinsed and drained
1-1/2 cups canned black beans
1 jalapeno pepper (optional), diced

Directions:

Heat oil in a heavy saucepan over medium heat. Saute onion and garlic
until softened. Stir in next 8 ingredients and bring to a boil.
Immediately reduce heat to medium low and simmer 15 minutes.Add beans and simmer another 20-30 minutes, adding water if chili becomes too thick.Stir jalapeno pepper into chili just before serving.


BAKING

Apple Heart Muffins

Makes: 12
Prep Time: 10 min.
Cook Time: 25 min.

Ingredients:

2 cups whole wheat flour
1 tsp baking soda
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1/4 rounded tsp salt
2 large eggs
1 cup plus 2 tbsp frozen, thawed apple juice concentrate
2/3 cup buttermilk (or non-dairy milk)
2 tbsp oat bran
2 small Granny Smith apples, peeled, cored, and chopped
1/3 cup hemp seed hearts

Directions:

Preheat oven to 350C. Grease 12 standard size muffin-pan cups.
Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt. Mix together eggs, apple juice and milk. Stir flour mixture and oat bran into egg mixture until dry ingredients are just moistened. Do not over mix. Gently stir in chopped apples and hemp seed hearts. Spoon batter into prepared pan, filling cups 2/3 full. Garnish each muffin with an apple slice, sprinkle with hemp seed hearts.

Banana Bread

Makes: 1 loaf
Prep Time: 10 min.
Cook Time: 45-60 min.

Ingredients:

2 eggs
1/3 cup applesauce
2/3 cup sugar
2 cups whole wheat flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1 cup mashed very ripe bananas (about 3 medium)
1/4 cup hemp seed hearts
1/4 cup chocolate or carob chips (optional)

Directions:

Preheat oven to 300 degrees. Mix first 3 ingredients with mixer at medium speed until pale yellow. Add dry ingredients alternately with bananas to mixture. Mix at medium speed until well blended.
Pour into greased or sprayed loaf pan (9 x 5 or 8 1/2 x 4 1/2). Bake 45-60 minutes, until cake tester comes out clean and dry. Let cool in pan 20-30 minutes before turning out onto rack.
Drop by rounded teaspoonfuls onto cookie sheet, 2 inches apart. Bake 10 to 12 minutes until golden brown. Let stand 1 minute before removing and cooling on a wire rack.
